I have never done one but It should be straight forward. I think the worst part will be supplying the necessary power and ground to the engine harness. Your old guages and ign switch/ heater fan circuit ext lights etc. harness i would leave untouched. Just supply the engine harness what it needs and let it operate the engine like a stand alone system. I installed a 302 blower engine in an 97 jaguar xk8 and thats how I did it.

Well, it depends on exactly what you want to do. I'm assuming you're talking about the 79 you've got listed in your avatar? Do you want a modified 5.0 EFI or would you be happy with a good stock 5.0 EFI? For the older cars, I suggest getting a complete 86 GT harness, from front to back, and you can modify that for use with mass air if you want to modify the car.

I've done the conversion on several 79-86 cars. You will need the following parts:
'86 GT wiring harness, '86 GT dash cluster, '86 GT fuel level sending unit.
'86-'93 gas tank, '86-'93 5.0 EFI fuel lines. Might as well upgrade the in tank fuel pump at this point too, to a 255lph unit.

If you're swapping motors, it won't be too hard as you'd probably wind up getting a complete EFI motor from intake to pan. However, if you're converting your '79 302 to EFI then you will need the following:
'86-'93 upper and lower intake manifolds (preferably '87+) complete with all sensors, '86+ fuel rail and injectors, '86-'93 throttle body and EGR spacer (preferably '87+), '86-'93 intermediate fuel lines from pass wheel well to fuel rail, '86-'93 MAP sensor. If you're going Speed Density, then you will need an '86-'88 SD computer. If you're going to go Mass Air Flow, then you'll need an '89-'93 A9L computer (A9P will work too, just programmed for AOD) and you will have to perform the additional wiring mods to make the MAF system work, and you will also require an '89-'95 MAF sensor with the appropriate inlet pipes. Hope this helps, I hope I didn't leave anything out.

Thanks for the input, I will be doing a engine EFI swap into my ride. Now I just have to track down a doner car for the surgery.
