now do i get a 195 or 180 stat? stock water pump...

I'm running a 195, just put it in a few weeks ago, IMO a 180 does not give any noticeable power gain and just reduces fuel economy and increases emmissions.
P.S. Spectra Premium makes a decent rad, that's what's in my car.

If your car calls for 195, use 195. As was said above, using a lower t-stat drops your fuel economy and your engine is designed to run at that temp.

A 180 for sure.

If your really worried about fuel economy then don't build a Mustang! As far as emissions go there are other aspects that will effect it way more then a t-stat ever will.
