Cool thermostat sealant

1966 2v mustang.....what type of gasket sealant is best to use when installing new thermostat? Both surfaces will be clean and I am changing from a 160 to a 180 tstat. Also, what should I use for a connector as I am going to loop the heater hoses until I replace the heater core over the winter?
