I found this one quick for you but I've never dealt with this company or seen the quality of their product: 05-10 Ford Mustang Rear Seat Delete - RearSeatDelete.com

I went with a custom aluminum panel for the rear seat delete in my '97. Here's a link:

I didn't see an aluminum rear seat delete for the '05 + but email them if you like the race look - they are a custom shop.

The American Muscle kit does look nice and from what I understand it looks stock when installed. I have read some complaints online that its flimsey - basically carpeted cardboard - but if your looking to shed pounds thats exactly what you want. Just dont expect to lean up against it when your grabbing something from the back seat - unless you want a quick trip to the trunk that is!
