I know someone had a similar problem with their mustang, but I don't recall what people suggested, and I can't seem to find the thread. So, I guess I'll just post my problem here again. I've noticed with the capri, that it seems to stall quite a lot (especially so when it's cold), for the first 5 minutes or so. I can have my foot with the clutch to the floor, but it'll still die on me. After 5 minutes or so (Idk if this corresponds to the engine being heated up or not? I think so), It stops it's constant stall. What would be causing this problem? What can I do to fix it?

I didn't bother to read all the replies to this, there seems to be 7 pages of responses?? Anyway, first and foremost head over to foureyedpride.com and check out their forums. Very informative site for 79-86 Owners such as ourselves.
Beyond that, to improve power output here are some realistic and cheap things you can do:
Subframe connectors. Edelbrock Performer 289/302 intake manifold, rebuild and rejet your stock Holley 4 barrel carburator to get the right amount of air and fuel, install an 86+ dual hump transmission crossmember (to allow installation of true dual exhaust), intall 86+ short tube headers, 2.5" off road H pipe, and a 'cat back' exhaust system of your choice, upgraded mechanical fuel pump set at 7psi, and a K+N filter in the stock airbox. This should net you about 200HP.

The biggest issue with your motor is the fact that it's old and has a hydraulic flat tappet camshaft, and these wear out over time. This means your performance has/will deteriorate with time. Personally, I would try to keep the exterior as stock as possible and pull the original motor and trans and put them aside in storage. That way, you can restore it and keep it looking original. Buy yourself an 87+ motor (roller tappet camshaft instead of flat tappet) and matching T5 trans and you're already ahead of the game. The 225HP 87+ 5.0 HO will make more power with a 600 cfm Holley and an Edelbrock Performer RPM dual plane intake, so you'll already be up 30-45HP over what you've got now... not to mention the added torque from the new setup. Chances are you'll get the new motor with the stock or aftermarket headers, and toss on the rest of the exhaust etc and you'll be loving life. That's my suggestion.

I may replace the transmission, but the engine really doesn't have that many miles on it. 167k. It has new carburator. I really don't think I want to rip out the whole engine though.

Well, if you're sure about the mileage (IIRC they only had 5 digit odometers) then keep your motor. I am only making my suggestion so that you do not start modding the original engine if there may ever be a restoration in its future. These will be valuable cars one day. If you dont want to change motors, then stick to my first round of suggestions. You will most likely have to rejet your new carb to work best with the other mods I suggested.

I'm 100% sure about the mileage.
