Do you plan on selling your harness and EEC?
If you let it go cheap I might know some one that may be interested...

 

M last mustang was an '88 that was converted from EFI to carb. I didn't make the conversion myself, but from what I remember of it, the guy i bought it from simply bypassed the EEC, and put in the goodies you would need for a carubureted setup such as solenoid, distributor, carb of course, and intake. It was pretty simple, ran sweet, but like someone already mentioned, there was lots of tinkering with the carb to get the setup correct. If i remember anything else about it, I'll let you know...
